Tomato Pesto Feta Salmon Dinner…

Want to impress your friends or just make a great meal for the family?  You just need 4 ingredients and 30 minutes to create this super easy recipe.

Main Dish 

Ingredients:    

Salmon

Pesto (make your own, or Costco brand works well too!)

Feta Cheese

Carmello or Roma Tomatoes

Side Dish

Ingredients:    

Green Beans

Italian Dressing

Italian Seasoning

Salt and Pepper to taste

Side Dish #2

Ingredients:   

Chicken Broth

Rice

Place Salmon on a baking sheet and cover with Pesto. Sprinkle feta cheese over the top. Go crazy or go light, whatever your taste buds prefer. Slice tomatoes then place on top of the cheese. Wala… Bake salmon at 375 for 25 minutes (large piece of salmon may need a bit longer) OR place on the BBQ for 30 minutes. 

Side dish:  ¼ cup of Italian dressing in the bottom of a skillet, add green beans, sprinkle  Italian seasoning, and salt and pepper to your liking. Saute for 10 minutes for al dente green beans. 

Perfect Rice:  Bring 2 cups of chicken broth to a boil, add 1 cup of rice. Reduce heat to low, cover and let simmer for 20 minutes. 

DING! DING! DING! 

DINNER IS SERVED.
